This biscuit is made from a delicate mixture of wheat flour, pure honey, and sugar. The baking takes place at a very high temperature, so that the honey caramelizes very quickly. When cooling, the couque then hardens like caramel.
You can also try a soft variant of the “couque de Dinant”: the “couque de Rins”.
